Spinach is grown for their leaves which are eaten both fresh and cooked. They are often an ingredient of pudding, omelet, pancakes, various soups, salads, etc. Spinach is one of the earliest leafy vegetables. They grow well in short day conditions. You can keep spinach in a fridge not for more than 2-3 days.

The most valuable spinach is fresh. They shouldn’t be chopped with knife as this way they lose vitamins, especially vitamin C. Spinach can be spiced up with lemon juice, balsamic sauce, white wine, vinegar, olive oil, mustard, garlic, parsley, dill, basil, nutmeg, mushrooms, fresh berries and fruits.

Spinach leaves are very useful as they contain lots of vitamins and minerals. 50 g of fresh spinach contain 8.4 mg of vitamin C. They are also rich in vitamins, K, A and B, folic acid, iron. Spinach is a great antioxidant. Recent studies have shown that spinach juice, comparing with juice of other vegetables inhibits the formation of cancerous cells.

Because of this many biologically active substances, it is not advised to eat spinach every day or a big portion at once. Spinach is also not recommended for people having diabetes and they increase blood sugar levels.
