Why do we need fat?

Many articles write about the rules of healthy eating and all they keep saying that we should use products having less fat, eat boiled food instead of the fried in the oil one. However, in reality fat and oils are irreplaceable for our body, especially the ones got from vegetables. Why is that so?

According to experts, fat is one of the most important nutrients which are included into human cells. They are a good source of energy because they are involved in the processes of thermoregulation and provide the organoleptic characteristics: taste, smell and the color. Fat slows down all digestion processes and thus delays the sense of hunger. Besides, together with fat, body receives and absorbs vitamins A, D, E, K much easier.

Vegetable and animal oils have different amount of monounsaturated and polyunsaturated fatty acids. These unsaturated fatty acids should be kept away from the light because after the constant contact with air there appears the unpleasant taste and odor. Animal fats are rich in saturated fatty acids that are not so irreplaceable and healthy. Remember that monounsaturated and polyunsaturated fatty acids are the most important for human and their valuable functions play an important role in metabolism processes.

Polyunsaturated fatty acids must be included in our daily menu together with food because they are included in the physiological function of the human body. This is one of the most important active parts of the food and such foods as sea food, various fishes, vegetable oils included.

Before frying in the oil you should choose the one which contains more monounsaturated fatty acids. Besides, keep in mind that you shouldn’t use the same oil for frying and salad. The best place for storing oil is in a dry, cool place at room temperature. It is also recommended for refined oil, containing the monounsaturated fatty acids, not to be stored for up to 12 months. Cold pressed oils are very pure, so they should be eaten in 9 months.
